The first exhibition for the online museum, Beba Epstein: The Extraordinary Life of an Ordinary Girl uses interactive storytelling to contextualize hundreds of artifacts from the YIVO archives, taking the user on a journey of discovery. This free event is based on the life of a young girl named Beba Epstein, born in Vilna, Poland (now Vilnius, Lithuania), in 1922, whose autobiography was discovered in 2017. You will discover that despite her exceptional fate, Beba is not so different from any other young teenager today.
During the online museum tour you will hear from YIVO’s Executive Director, Jonathan Brent, and the Chief Curator of the Online Museum and Webby award-winning interactive designer,
Karolina Ziulkoski. Feel free to preview the exhibition in advance of the online session.

Pre-heat oven to 325 degrees if convection, 350 if not
1 1/4 cups hot water
2 large eggs
1/4 cup oil (I use canola any veg. oil will work)
1/3 cup granulated sugar
1 1/2 tsp. salt
3/4 TBS. Instant quick acting yeast (SAF is my favorite)
Mix above ingredients together then add:
2.5 cups all purpose flour
2.5 cups high gluten bread flour
Add all flours to liquids all at once then mix till dough pulls together and is smooth. Knead dough for a minute or two.
Place 1 TBS of oil in a bowl add dough cover with plastic wrap. And set in a warm area. (Can turn oven to lowest setting with a bowl of warm water in bottom, turn oven off 10 min. before letting dough rise)
Let rise for 1 hour. Knead for a bit to deflate, return to bowl cover and let rise for half an hour.
Shape into braided loaf brush with egg wash and seed if desired
Place in warm area and let rise for about 30 minutes or till doubled.
Bake for approximately 20-30 minutes till browned.
Suggestions:
For a warm place to let things rise if you have an extra oven set to lowest setting and let warm and turn off 15 min. prior to putting dough or bread in to rise.
If you don’t have a 2nd oven but a large microwave oven heat a large container of water in it. Pull out and put either dough or loaves in to allow to rise.
If you don’t have a large micro wave oven get a container such as a large plastic tub with a lid put a bowl of hot water in it cover and let sit for 10 min. remove water put dough in or pan with loves on it and cover.
Dough is alive and does generate some heat. So if it is in an enclosed space it should rise however it may take a little longer.
